Gingernut Biscuits
Courtesy of Michelle from HQNZ, here is a recipe from her 'foodie, stylist school friend, Fiona Hughes, who features in Cuisine NZ'.  Her recommendation... sublime dipped in a cup of tea!

300g plain flour
150g softened butter
200g brown sugar
70g dark cane sugar
3 ½ tsp brown sugar
1 tsp mixed spice
½ tsp ground black pepper
¼ tsp baking soda
1 large free range eggs
½ cup golden sugar
200g glace ginger finely chopped
Prepare two baking trays and line with paper. Preheat oven to 180C.
Beat the butter and sugars together until pale and creamy.  Add the egg and golden syrup and mix to combine.
Sift in the flour, spices, baking soda and stir in the chopped ginger. Add to the butter sugar mixture and mix to make a dough.
Shape spoonful's into balls and flatten with the palm of your hand.
Bake until golden brown. Approximately 15 minutes.
Wait until cool to crisp.
