I suggest you invite buyers to your venue, ask them to pay their own transport and charge a room cleaning fee. Invite their partners to accompany them on the 6 hour trip to insure good attendance. Instead of shouting meals off the menu put on a sampler plate which you can accompany with a local produce wine tasting.
They are buyers, they really want to sample everything, So now invite the local attractions to join in the sampling, it makes them feel important and you look professional and your chef will appreciate your support.
Find out what they are planning before they arrive, (no one drives 6 hours for fun) prepare a draft quote and show them the rooms they will be using and ask them if you offer a suitable discount can they book today?
